Eddoe (Colocasia antiquorum)

Eddoe is a tropical root vegetable, which is sometimes referred to as “taro” or “dasheen”. Eddoe is a starchy corm with an earthier, slightly sweeter, and nuttier flavor than the larger purple taro variety (Colocasia esculenta). It is also firmer in texture. Eddoe must be cooked before eaten to remove its high calcium oxalate content, which may cause mouth irritation if consumed raw. Eddoe can be boiled, steamed, or fried. It thrives in full sunlight, moist soils and can be grown in both soil and wet environments like bog gardens.
