Malabar spinach (Basella alba)

Malabar Spinach is a vigorous, heat-loving climbing vine with thick, glossy leaves used as a spinach substitute. It thrives in hot climates where true spinach struggles. The leaves have a mild, slightly peppery flavor and a mucilaginous (slimy) texture, especially when cooked, which helps thicken soups and stews. Eaten raw in salads or cooked in stir-fries, the leaves are rich in vitamins A and C, iron, and antioxidants.
